Couscous with vegetables and chickpeas on a painted Tunisian plate

Djerba couscous

The family meal of all Tunisia, which Djerba likes to cook with fish.

Tunisian couscous is semolina steamed above a simmering broth, then served with a red sauce of tomato and spices. On the island, it is often made with fish. Since 2020, the knowledge and practices of couscous have been on UNESCO's list of Intangible Cultural Heritage, shared by Tunisia, Algeria, Morocco and Mauritania.

At Restaurant Sultana, couscous comes in a red sauce with the topping of your choice: lamb, chicken, fish, prawns, osben (a Tunisian speciality of offal and herbs) or plain. Some toppings are not available every day: the list below shows what is served today. You may also like our kamounia and our fish dishes.
