Brik and Tunisian starters
A crisp pastry and a runny egg yolk: brik opens a Tunisian meal.
Brik is a very thin sheet of pastry, called malsouka, folded around a whole egg and fried: the yolk should stay runny, and you eat it with your fingers. Other classic starters are ojja, eggs cooked in a spicy tomato sauce, and mechouia salad, grilled peppers and tomatoes crushed together.
At Restaurant Sultana you will find egg brik, tuna brik, ojja with escalope or merguez, tastira (fried peppers and tomatoes crushed with garlic and egg) and salads. A good way to start before a kamounia or a couscous. Here are today's starters.
